Ingredients

The salad

  • 2 cans chickpeas
  • 1 whole English cucumber
  • ½ whole red onion
  • 2 cups yellow and orange bell peppers
  • ½ cup Kalamata olives
  • ½ cup feta cheese
  • 1 whole avocado
  • ¼ cup fresh chopped herbs
  • to taste salt
  • to taste pepper

The dressing

  • ¼ cup extra virgin olive oil
  • ¼ cup lemon juice
  • ½ teaspoon Dijon mustard
  • 1 clove garlic
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions

  1. Combine the dressing ingredients in a small container and whisk until well mixed.
  2. Drain and rinse the chickpeas, then place them in a large bowl.
  3. Add the cucumber, red onion, bell peppers, olives, feta cheese, avocado, and herbs to the bowl.
  4. Drizzle the dressing over the salad and toss gently to coat.
  5. Adjust seasonings to taste and serve.
