Mediterranean Chickpea Salad

Ingredients

The salad

  • 2 cans chickpeas
  • 1 each red bell pepper
  • 1 each orange bell pepper
  • 2 cups cucumbers
  • 4 cups grape tomatoes
  • ½ large red onion
  • 8 oz crumbled feta
  • ½ cup chopped fresh parsley
  • cup chopped fresh mint

The dressing

  • ½ cup olive oil
  • 2 large lemons
  • 1 tbsp dijon mustard
  • 1 tbsp honey
  • 2 cloves garlic
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Wash and chop all veggies and herbs.
  2. In a large bowl, combine chickpeas, peppers, cucumbers, tomatoes, red onion, and feta, then top with parsley and mint.
  3. In a glass measuring cup, whisk together olive oil, lemon juice, dijon mustard, honey, garlic, salt, and pepper.
  4. Pour the dressing over the salad and toss until fully coated.
  5. Top with extra crumbled feta cheese and serve.
