Ingredients

Poppy Seed Dressing

  • ½ cup vegetable oil or light olive oil
  • ¼ cup red wine vinegar
  • ¼ cup granulated sugar or less to taste
  • 1 teaspoon dried mustard
  • 1 teaspoon poppy seeds
  • to taste salt

Salad

  • 3 tablespoons butter (optional but recommended)
  • 1 cup pecans
  • 16 ounces baby spinach
  • 16 ounces strawberries, quartered or sliced

Instructions

  1. Prepare the poppy seed dressing by mixing vegetable oil, red wine vinegar, sugar, dried mustard, poppy seeds, and salt in a bowl or jar.
  2. Allow the dressing to blend at room temperature while preparing the salad.
  3. In a skillet, melt butter over medium-high heat, add pecans, and sauté until toasted and fragrant.
  4. Remove the pecans from heat and let them cool on paper towels.
  5. In a large bowl, combine spinach, strawberries, and pecans.
  6. Drizzle the dressing over the salad and toss until evenly coated.
