Lentil Sloppy Joe Stuffed Sweet Potatoes

Ingredients

The filling

  • 1 tablespoon coconut oil
  • 1 yellow onion (chopped)
  • 1 green bell pepper (chopped)
  • 2 cloves garlic (minced)
  • 1 ½ cups tomato puree
  • 1 ½ teaspoons sea salt
  • 1 ½ tablespoons Dijon mustard
  • 1 - 2 tablespoons pure maple syrup
  • 1 ½ cups water
  • 1 teaspoon chili powder
  • 1 cup red lentils (dried)

The sweet potatoes

  • 4 - 6 sweet potatoes

Optional garnishes

  • parsley
  • green onions

Instructions

  1. Melt coconut oil in a large pot over medium heat and sauté chopped onion, bell pepper, and minced garlic until tender.
  2. Add tomato puree, salt, mustard, maple syrup, water, chili powder, and lentils to the pot, and bring to a boil.
  3. Reduce heat to a simmer and cover, cooking until lentils are tender, stirring occasionally.
  4. Adjust seasonings to taste, adding more maple syrup if desired.
  5. Slice sweet potatoes in half lengthwise, mash slightly, sprinkle with salt, and spoon the lentil filling on top.
