Lentil Sloppy Joe Stuffed Sweet Potatoes

Instructions
- Melt coconut oil in a large pot over medium heat and sauté chopped onion, bell pepper, and minced garlic until tender.
- Add tomato puree, salt, mustard, maple syrup, water, chili powder, and lentils to the pot, and bring to a boil.
- Reduce heat to a simmer and cover, cooking until lentils are tender, stirring occasionally.
- Adjust seasonings to taste, adding more maple syrup if desired.
- Slice sweet potatoes in half lengthwise, mash slightly, sprinkle with salt, and spoon the lentil filling on top.
