25-Minute Lentil Sloppy Joes

Ingredients

The filling

  • 2 tsp olive oil
  • 1 medium yellow onion, diced
  • 1 medium green pepper, diced
  • 3 cloves garlic, minced
  • 3 cup cooked lentils
  • 2 tbsp chili powder
  • 2 tsp oregano
  • a pinch cayenne pepper
  • 2 cup crushed tomatoes
  • ¼ cup tomato paste
  • 3 tbsp maple syrup
  • 2 tbsp yellow mustard

For serving

  • 8 small Kaiser rolls or sesame buns

Instructions

  1. Heat olive oil in a large non-stick skillet over medium-high heat.
  2. Sauté the onion and green pepper for about eight minutes until softened, then add the garlic and sauté for another couple of minutes.
  3. Add the cooked lentils, chili powder, oregano, cayenne pepper, and season with salt and pepper.
  4. Stir in the crushed tomatoes and tomato paste, and cook for about ten minutes.
  5. Stir in the maple syrup and mustard, and cook for another two minutes.
  6. Serve the filling on toasted Kaiser rolls or hamburger buns.
