Ingredients

The filling

  • 1 cup dry brown lentils
  • 1 tablespoon olive oil
  • 1 small yellow onion
  • ½ cup diced carrot
  • 3 cloves garlic
  • ¼ cup ketchup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons brown sugar
  • 1 teaspoon chili powder
  • ½ teaspoon vegan Worcestershire sauce
  • ½ teaspoon hot sauce
  • ½ teaspoon salt
  • 2 and ¼ cups water or vegetable broth
  • ¼ cup barbecue sauce

To serve

  • 5 pieces burger buns
  • as desired various optional toppings (lettuce, white onion, pickles, avocado)

Instructions

  1. 1. Press the 'saute' function on the Instant Pot and heat olive oil.
  2. 2. Saute diced onions and carrots until softened, about 6 minutes, then add garlic and cook for another minute.
  3. 3. Deglaze the pot with a little vegetable broth.
  4. 4. Add all remaining ingredients except barbecue sauce to the pot.
  5. 5. Lock the lid and set to high pressure for 15 minutes.
  6. 6. Allow the pressure to release naturally for about 15 minutes.
  7. 7. Stir in the barbecue sauce and serve on toasted burger buns with desired toppings.
