Instructions
- 1. Press the 'saute' function on the Instant Pot and heat olive oil.
- 2. Saute diced onions and carrots until softened, about 6 minutes, then add garlic and cook for another minute.
- 3. Deglaze the pot with a little vegetable broth.
- 4. Add all remaining ingredients except barbecue sauce to the pot.
- 5. Lock the lid and set to high pressure for 15 minutes.
- 6. Allow the pressure to release naturally for about 15 minutes.
- 7. Stir in the barbecue sauce and serve on toasted burger buns with desired toppings.
