Ingredients

The filling

  • 1 cup dry green or brown lentils
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • ½ cup diced carrots
  • 3 cloves garlic, minced
  • ¼ cup ketchup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons brown sugar
  • 1 teaspoon chili powder
  • ½ teaspoon Worcestershire sauce (vegan)
  • ½ teaspoon hot sauce (optional)
  • ¼ teaspoon salt
  • cups reduced sodium vegetable broth or water
  • ½ cup barbecue sauce

For serving

  • 5 pieces burger buns
  • to taste optional toppings (lettuce, onion, pickles, avocado, tomato)

Instructions

  1. 1. Heat a medium sauce pot over medium-high heat and add olive oil.
  2. 2. Sauté diced onions and carrots until translucent, about 6-8 minutes.
  3. 3. Add minced garlic and sauté for an additional minute until golden.
  4. 4. Stir in all ingredients except for the BBQ sauce and combine well.
  5. 5. Bring to a rapid simmer over high heat, then reduce to a simmer.
  6. 6. Cover and simmer until lentils are tender and liquid is absorbed, about 15-20 minutes.
  7. 7. Stir in ½ cup of barbecue sauce just before serving.
  8. 8. Serve on burger buns with optional toppings.
