Vegetarian Sloppy Joes

Instructions
- 1. Heat a medium sauce pot over medium-high heat and add olive oil.
- 2. Sauté diced onions and carrots until translucent, about 6-8 minutes.
- 3. Add minced garlic and sauté for an additional minute until golden.
- 4. Stir in all ingredients except for the BBQ sauce and combine well.
- 5. Bring to a rapid simmer over high heat, then reduce to a simmer.
- 6. Cover and simmer until lentils are tender and liquid is absorbed, about 15-20 minutes.
- 7. Stir in ½ cup of barbecue sauce just before serving.
- 8. Serve on burger buns with optional toppings.
