Ingredients

The filling

  • 1 cup red lentils
  • 2 cups water
  • 1 small head cauliflower
  • 2 tablespoons olive oil
  • 1 small yellow onion
  • ½ large red bell pepper
  • 1 stick celery
  • 1 medium carrot
  • 2 cloves garlic
  • 2 15 oz cans crushed tomatoes
  • 1 8 oz can tomato sauce
  • ¼ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons red wine vinegar
  • 2 tablespoons brown sugar
  • 1 ½ teaspoons chili powder
  • 1 teaspoon ground mustard
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • to taste Kosher salt
  • to taste black pepper

For serving

  • 4 whole wheat hamburger buns

Instructions

  1. Boil lentils and water in a medium saucepan, then simmer until tender.
  2. While lentils cook, chop cauliflower into large chunks and process until crumbly.
  3. Heat olive oil in a large pot and sauté onion, red pepper, celery, and carrot until soft.
  4. Add garlic and cauliflower, cooking for a few minutes.
  5. Stir in crushed tomatoes, tomato sauce, ketchup, Worcestershire sauce, red wine vinegar, brown sugar, and spices.
  6. Mix in cooked lentils and season with salt and pepper, cooking on low for 10 minutes.
  7. Serve the mixture on buns or over spaghetti squash, quinoa, or in lettuce wraps.
