Instructions
- Boil lentils and water in a medium saucepan, then simmer until tender.
- While lentils cook, chop cauliflower into large chunks and process until crumbly.
- Heat olive oil in a large pot and sauté onion, red pepper, celery, and carrot until soft.
- Add garlic and cauliflower, cooking for a few minutes.
- Stir in crushed tomatoes, tomato sauce, ketchup, Worcestershire sauce, red wine vinegar, brown sugar, and spices.
- Mix in cooked lentils and season with salt and pepper, cooking on low for 10 minutes.
- Serve the mixture on buns or over spaghetti squash, quinoa, or in lettuce wraps.
