Ingredients

The filling

  • 3 cups organic or reduced sodium vegetable broth
  • cups dried green or brown lentils, rinsed and drained
  • 1 cup diced onion
  • 1 small red or green bell pepper, diced
  • 2 tablespoons Dijon mustard
  • 2 tablespoons brown sugar
  • 1 teaspoon red wine or apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon chili powder
  • 1 teaspoon salt-free all-purpose seasoning
  • ½ teaspoon smoked paprika
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 can (14-ounce) whole tomatoes

The buns

  • 10 pieces 100% whole-grain hamburger buns

Instructions

  1. Combine all ingredients except the buns in the slow cooker, squeezing the whole tomatoes over the other ingredients and pouring in the juice.
  2. Cover and cook on low for 4½ hours until the lentils are tender.
  3. Toast the buns until golden and fill them with the lentil mixture.
