Ingredients

The lentil mixture

  • 2 teaspoons olive oil
  • 1 small onion, chopped
  • 1 cup brown or green lentils, rinsed and picked over
  • 2 cups vegetable broth
  • 1 15-ounce can tomato sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon molasses
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon tamari or soy sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon garlic powder
  • 1 teaspoon mustard powder
  • a pinch cayenne pepper (optional)
  • to taste salt and pepper

For serving

  • 4-6 hamburger rolls (optional)

Instructions

  1. 1. Heat the olive oil in a large saucepan over medium heat and cook the chopped onion until softened and beginning to brown.
  2. 2. Add the lentils and vegetable broth, bring to a boil, then partially cover and reduce heat to low, simmering for 20 minutes until lentils are tender but firm.
  3. 3. Stir in the tomato sauce, brown sugar, molasses, apple cider vinegar, tamari, tomato paste, garlic powder, mustard powder, and cayenne pepper.
  4. 4. Increase heat to medium, bring to a boil, and cook until the sauce thickens, stirring frequently for 10-15 minutes.
  5. 5. Serve the lentils on hamburger rolls if making sandwiches.
