Sloppy Lentils

Instructions
- 1. Heat the olive oil in a large saucepan over medium heat and cook the chopped onion until softened and beginning to brown.
- 2. Add the lentils and vegetable broth, bring to a boil, then partially cover and reduce heat to low, simmering for 20 minutes until lentils are tender but firm.
- 3. Stir in the tomato sauce, brown sugar, molasses, apple cider vinegar, tamari, tomato paste, garlic powder, mustard powder, and cayenne pepper.
- 4. Increase heat to medium, bring to a boil, and cook until the sauce thickens, stirring frequently for 10-15 minutes.
- 5. Serve the lentils on hamburger rolls if making sandwiches.
