Easy Twice-Baked Potatoes With BBQ Turkey

Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Place sweet potato halves face-side down and bake for 40-45 minutes until soft.
- In a large skillet, heat olive oil and sauté onions and carrots until translucent, about 5 minutes.
- Add ground turkey and cook until no longer pink, then add garlic and spices, stirring to combine.
- Stir in the BBQ sauce.
- Once potatoes are cool, scoop out the centers and mix them with the turkey mixture.
- Fill the sweet potato skins with the turkey mixture and bake for an additional 10 minutes.
- Top with green onions and serve.
