Ingredients

The potatoes

  • 3 large sweet potatoes

The filling

  • 1 lb ground turkey
  • 2 tbsp olive oil
  • 1 small yellow onion
  • 2 large carrots
  • 3 cloves garlic
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp pepper
  • ½ cup paleo BBQ sauce
  • to taste chopped green onion

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Place sweet potato halves face-side down and bake for 40-45 minutes until soft.
  3. In a large skillet, heat olive oil and sauté onions and carrots until translucent, about 5 minutes.
  4. Add ground turkey and cook until no longer pink, then add garlic and spices, stirring to combine.
  5. Stir in the BBQ sauce.
  6. Once potatoes are cool, scoop out the centers and mix them with the turkey mixture.
  7. Fill the sweet potato skins with the turkey mixture and bake for an additional 10 minutes.
  8. Top with green onions and serve.
