The Oatmeal Pecan Streusel

Instructions
- Preheat the oven to 400°F.
- Scrub and dry the sweet potatoes, then prick them with a knife and bake for 40-50 minutes until fork-tender.
- Blend ½ cup of oats in a food processor until they reach a flour consistency.
- In a bowl, mix the oat flour with the remaining streusel ingredients until combined.
- Remove the sweet potatoes from the oven, slice them in half, and scoop out the insides into a bowl.
- Mix the sweet potato insides with milk, maple syrup, cinnamon, nutmeg, and salt, then blend until smooth.
- Scoop the sweet potato mixture back into the skins and top with the streusel.
- Bake again for 15 minutes and serve.
