Ingredients

The Sweet Potatoes

  • 5 pieces sweet potatoes
  • cup milk
  • 5 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • a pinch salt

The Oatmeal Pecan Streusel

  • cups old-fashioned oats
  • 1 cup roughly chopped pecans
  • 3 tablespoons maple syrup
  • 3 tablespoons coconut oil
  • 1 teaspoon ground cinnamon
  • a pinch salt

Instructions

  1. Preheat the oven to 400°F.
  2. Scrub and dry the sweet potatoes, then prick them with a knife and bake for 40-50 minutes until fork-tender.
  3. Blend ½ cup of oats in a food processor until they reach a flour consistency.
  4. In a bowl, mix the oat flour with the remaining streusel ingredients until combined.
  5. Remove the sweet potatoes from the oven, slice them in half, and scoop out the insides into a bowl.
  6. Mix the sweet potato insides with milk, maple syrup, cinnamon, nutmeg, and salt, then blend until smooth.
  7. Scoop the sweet potato mixture back into the skins and top with the streusel.
  8. Bake again for 15 minutes and serve.
