Cinnamon Streusel Swirled Maple Sweet Potato Casserole

Ingredients

The sweet potato mixture

  • 4 medium sweet potatoes
  • ¼ cup real maple syrup
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ cup heavy cream
  • 4 tablespoons salted butter, melted
  • 2 eggs lightly beaten

The streusel topping

  • ½ cup all-purpose flour
  • ½ cup brown sugar, packed
  • ½ cup real maple syrup
  • 1 cup raw walnuts, finely chopped
  • 1 teaspoon cinnamon
  • 8 tablespoons cold butter, cubed

Instructions

  1. Preheat the oven to 400°F and grease a 9x13 inch baking dish.
  2. Poke holes in the sweet potatoes and bake for 1 hour until soft. Cool and reduce the oven temperature to 350°F.
  3. Peel the sweet potatoes and mash them in a bowl. Mix in maple syrup, vanilla, cinnamon, heavy cream, melted butter, and eggs until combined.
  4. For the streusel, mix flour, brown sugar, and cinnamon in a bowl. Cut in 6 tablespoons of butter until crumbly, then stir in ¼ cup maple syrup and walnuts.
  5. Layer half of the sweet potato mixture in the dish, sprinkle with ⅓ of the streusel, add the remaining sweet potatoes, and top with the rest of the streusel.
  6. Bake for 30-40 minutes until the top is dark golden.
  7. In a saucepan, brown the remaining 2 tablespoons of butter over medium heat and stir in the remaining maple syrup.
  8. Drizzle the browned maple butter over the casserole just before serving and serve warm.
