Cinnamon Streusel Swirled Maple Sweet Potato Casserole

Instructions
- Preheat the oven to 400°F and grease a 9x13 inch baking dish.
- Poke holes in the sweet potatoes and bake for 1 hour until soft. Cool and reduce the oven temperature to 350°F.
- Peel the sweet potatoes and mash them in a bowl. Mix in maple syrup, vanilla, cinnamon, heavy cream, melted butter, and eggs until combined.
- For the streusel, mix flour, brown sugar, and cinnamon in a bowl. Cut in 6 tablespoons of butter until crumbly, then stir in ¼ cup maple syrup and walnuts.
- Layer half of the sweet potato mixture in the dish, sprinkle with ⅓ of the streusel, add the remaining sweet potatoes, and top with the rest of the streusel.
- Bake for 30-40 minutes until the top is dark golden.
- In a saucepan, brown the remaining 2 tablespoons of butter over medium heat and stir in the remaining maple syrup.
- Drizzle the browned maple butter over the casserole just before serving and serve warm.
