Ingredients

The potatoes

  • 4 pieces raw Russet potatoes (7 oz each)

The filling

  • 2 slices center cut bacon
  • 8 oz uncooked 99% lean ground turkey breast or lean ground chicken breast
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 5 tablespoons barbecue sauce
  • ½ cup fat free sour cream
  • 2 tablespoons skim milk
  • 3 oz shredded 50% reduced fat sharp cheddar cheese

Instructions

  1. Preheat the oven to 400 degrees and prepare a sheet pan with aluminum foil.
  2. Poke holes in the potatoes and bake them on the middle rack for 45 minutes until cooked through.
  3. Cook the bacon until crispy, then crumble it.
  4. In a skillet, cook the ground turkey, seasoning it with paprika, salt, and pepper until browned.
  5. Add barbecue sauce to the turkey and cook for a couple more minutes.
  6. Once the potatoes are cool, slice them open and scoop out the insides, mixing them with sour cream, milk, and salt.
  7. Stir in cheddar cheese, ground turkey, and most of the bacon.
  8. Fill the potato skins with the mixture, top with remaining cheese and bacon, and bake for another 10-15 minutes until golden.
