Ingredients

  • ¼ cup raw sunflower seeds
  • ¼ cup hemp seeds
  • ¼ cup raw pistachios
  • to taste salt
  • 8 ounces fresh goat cheese

Sweet Corn Dressing

  • cup olive oil
  • 1 tablespoon shallot
  • 1 ear corn
  • 2 tablespoons white balsamic vinegar
  • 2 teaspoons honey
  • to taste salt and pepper

Salad

  • 3 cups fresh basil
  • 3 cups red leaf lettuce
  • 2 cups fresh raspberries
  • 1 small cantaloupe
  • 4 ounces thinly sliced prosciutto

Instructions

  1. Toast the seeds in a skillet with coconut oil, maple syrup, and a pinch of salt until golden and fragrant.
  2. Roll goat cheese into small balls and coat them with the toasted seeds.
  3. Prepare the dressing by sautéing shallots and corn, then mixing with olive oil, vinegar, honey, salt, and pepper.
  4. In a salad bowl, combine basil, lettuce, and raspberries.
  5. Wrap prosciutto around cantaloupe slices and place on the salad.
  6. Add goat cheese balls and drizzle with dressing before serving.
