Instructions
- Cut cantaloupe and honeydew melon into small balls using a melon baller.
- In a small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper to make the dressing.
- On a platter or large bowl, arrange the melon balls and scatter prosciutto around.
- Garnish with chopped mint, basil, and crumbled goat cheese.
- Drizzle the balsamic vinaigrette on top just before serving.
