Ingredients

The salad

  • 1 whole cantaloupe
  • 1 whole honeydew melon
  • 2 oz prosciutto
  • ¼ cup crumbled goat cheese
  • ¼ cup fresh mint
  • ¼ cup fresh basil

The dressing

  • tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. Cut cantaloupe and honeydew melon into small balls using a melon baller.
  2. In a small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper to make the dressing.
  3. On a platter or large bowl, arrange the melon balls and scatter prosciutto around.
  4. Garnish with chopped mint, basil, and crumbled goat cheese.
  5. Drizzle the balsamic vinaigrette on top just before serving.
