Ingredients

The muffin batter

  • 1 ½ cup all purpose flour

  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tablespoon vanilla powder or pure vanilla extract
  • 1 lemon zest and juice
  • 2 cups sweet cherries, pitted and halved

The topping

  • ½ cup granola

Instructions

  1. 1. Mix all dry ingredients together in one bowl, including vanilla powder.
  2. 2. Lightly beat the eggs and combine with Greek yogurt, oil, lemon zest, and juice.
  3. 3. Mix the wet ingredients until well blended.
  4. 4. Combine wet mixture with dry mixture and mix just enough to blend.
  5. 5. Fold in the cherries gently to avoid overmixing.
  6. 6. Sprinkle the tops with granola.
  7. 7. Bake at 350°F for 25-30 minutes until golden brown.
