Ingredients

Pie Crust

  • 2 cups blanched almond flour
  • ¼ teaspoon salt
  • ¼ cup sugar or sweetener
  • 1 large egg
  • 3 tablespoons unsalted butter, melted

Sweet Potato Filling

  • 1 pound sweet potatoes
  • 2 large eggs, room temperature
  • ½ cup unsalted butter, melted
  • ½ cup buttermilk
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 cup sugar or sweetener

Instructions

  1. Preheat the oven to 350°F.
  2. Grease a 9.5-inch pie pan with butter.
  3. Combine almond flour, sweetener, and salt in a bowl.
  4. Mix beaten egg and melted butter in another bowl.
  5. Add dry ingredients to a food processor, then add wet ingredients and pulse until combined.
  6. Press the dough into the greased pie pan and poke holes in it.
  7. Bake the crust for 10 minutes and let it cool for 15 minutes.
  8. Cook sweet potatoes using your preferred method (air fry, bake, or boil) until soft.
  9. Allow sweet potatoes to cool, then add all filling ingredients to a food processor and blend until smooth.
  10. Pour the filling into the cooled crust and smooth the top.
  11. Bake for 35-40 minutes until the edges are set but the middle is still wiggly.
  12. Cool the pie on the counter for about 4 hours before refrigerating.
