Instructions
- Preheat the oven to 350°F.
- Grease a 9.5-inch pie pan with butter.
- Combine almond flour, sweetener, and salt in a bowl.
- Mix beaten egg and melted butter in another bowl.
- Add dry ingredients to a food processor, then add wet ingredients and pulse until combined.
- Press the dough into the greased pie pan and poke holes in it.
- Bake the crust for 10 minutes and let it cool for 15 minutes.
- Cook sweet potatoes using your preferred method (air fry, bake, or boil) until soft.
- Allow sweet potatoes to cool, then add all filling ingredients to a food processor and blend until smooth.
- Pour the filling into the cooled crust and smooth the top.
- Bake for 35-40 minutes until the edges are set but the middle is still wiggly.
- Cool the pie on the counter for about 4 hours before refrigerating.
