Pesto Mozzarella Roll Ups

Instructions
- Preheat the oven to 400ºF and soften the tortillas in the microwave for 30 seconds.
- Slice the mozzarella string cheese in half length-wise and spread ½ Tbsp of pesto on the lower half of each tortilla.
- Place one piece of mozzarella on top of the pesto, fold the sides of the tortilla in, and roll it up from the bottom.
- Place the roll ups seam side down on a parchment-lined baking sheet and brush with cooking oil.
- Bake for about 13 minutes until golden brown and the cheese is melted.
- While baking, prepare the creamy tomato dip by mixing mayonnaise, tomato paste, and minced garlic.
- Let the roll ups cool slightly before serving with the dip.
