Instructions
- Mix the pesto and ricotta in a bowl, adding salt and pepper to taste, then stir in the beaten egg.
- Lay out the lasagna noodles and dry them with paper towels.
- Spread the ricotta mixture on each noodle, sprinkle with Parmesan, and roll them up.
- Spread some marinara sauce in a baking dish and place the roll-ups inside.
- Pour the remaining marinara sauce over the roll-ups and top with mozzarella cheese.
- Cool the dish completely before covering it for freezing.
- To reheat, thaw in the refrigerator or microwave, then bake at 350ºF until heated through.
