Pesto Lasagna Roll-Ups

Ingredients

The filling

  • ½ cup prepared basil pesto
  • 1 15-ounce container ricotta cheese
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 large egg
  • 12 noodles lasagna noodles
  • ½ cup shredded Parmesan cheese

The sauce

  • 1 ½ cups jarred marinara sauce
  • ½ cup shredded mozzarella cheese

Instructions

  1. Mix the pesto and ricotta in a bowl, adding salt and pepper to taste, then stir in the beaten egg.
  2. Lay out the lasagna noodles and dry them with paper towels.
  3. Spread the ricotta mixture on each noodle, sprinkle with Parmesan, and roll them up.
  4. Spread some marinara sauce in a baking dish and place the roll-ups inside.
  5. Pour the remaining marinara sauce over the roll-ups and top with mozzarella cheese.
  6. Cool the dish completely before covering it for freezing.
  7. To reheat, thaw in the refrigerator or microwave, then bake at 350ºF until heated through.
