Pesto Pizza Rolls

Ingredients

Pizza Dough

  • ¾ cup warm water
  • 2 tsp active dry or instant yeast
  • ½ Tbsp sugar
  • 1 Tbsp olive oil
  • 2 cups flour (plus some for dusting)
  • 1 tsp salt

Filling

  • ½ cup pesto
  • 2 oz pepperoni
  • 1 cup shredded mozzarella
  • ½ cup pizza sauce (for dipping, optional)

Instructions

  1. Combine warm water, yeast, and sugar; let sit until foamy.
  2. Mix 1 cup flour and salt in a bowl.
  3. Add olive oil to yeast mixture and pour into flour mixture; stir until thick batter forms.
  4. Gradually stir in more flour until a dough ball forms.
  5. Knead the dough on a floured surface for about five minutes.
  6. Place dough in a bowl, cover, and let rise until doubled in size.
  7. Preheat oven to 400ºF.
  8. Punch down the dough and shape it into a rectangle.
  9. Spread pesto over the dough, add pepperoni and half the cheese.
  10. Roll the dough into a log and slice into 8 pieces.
  11. Place rolls in a greased casserole dish and top with remaining cheese.
  12. Bake for about 30 minutes until golden and bubbly.
