Savory Vegan Pistachio Cheese Spread

Ingredients

The cheese spread

  • 1 cup Wonderful Pistachios In-Shell No Salt pistachios, shelled
  • ½ cup raw sunflower seeds
  • tablespoons minced garlic
  • ½ lemon zested
  • 2 tablespoons lemon juice
  • ¼ cup water
  • 2 tablespoons water
  • 1 tablespoon nutritional yeast
  • ¼ teaspoon sea salt or kosher salt
  • 1 tablespoon olive oil

For serving

  • 50 pieces grapes
  • 1 heaping cup Wonderful Pistachios No Shells Lightly Salted, crushed

Instructions

  1. Soak the No Salt pistachios and sunflower seeds in cold water for 12 to 36 hours.
  2. Drain the nuts and seeds, then blend them with garlic, lemon zest, lemon juice, water, nutritional yeast, salt, and olive oil until smooth.
  3. Scoop the mixture into cheesecloth, twist to secure, and refrigerate overnight or for at least 6 hours to set.
  4. Serve by wrapping the cheese around grapes and rolling in crushed pistachios.
