Vegan Pesto

Instructions
- Combine the pine nuts, lemon juice, garlic, salt, and pepper in a food processor and pulse until chopped.
- Add the basil and pulse until combined.
- With the processor running, drizzle in the olive oil and pulse until combined.
- For extra cheesy flavor, add nutritional yeast, or for a brinier flavor, add capers or sun-dried tomatoes and pulse to combine.
- Taste and adjust seasoning as desired, adding more of any optional ingredients for flavor.
- For a smoother pesto, add more olive oil.
