Vegan Pesto

Ingredients

The pesto

  • ½ cup toasted pine nuts or pepitas
  • 2 tablespoons fresh lemon juice
  • 1 small garlic clove
  • ¼ teaspoon sea salt
  • to taste freshly ground black pepper
  • 2 cups fresh basil leaves
  • ¼ cup extra-virgin olive oil

Optional add-ins

  • 1 tablespoon nutritional yeast
  • 2 teaspoons capers
  • 2 teaspoons oil-packed sun-dried tomatoes

Instructions

  1. Combine the pine nuts, lemon juice, garlic, salt, and pepper in a food processor and pulse until chopped.
  2. Add the basil and pulse until combined.
  3. With the processor running, drizzle in the olive oil and pulse until combined.
  4. For extra cheesy flavor, add nutritional yeast, or for a brinier flavor, add capers or sun-dried tomatoes and pulse to combine.
  5. Taste and adjust seasoning as desired, adding more of any optional ingredients for flavor.
  6. For a smoother pesto, add more olive oil.
