Simple Vegan Pesto

Ingredients

  • 4 cups packed fresh basil
  • ½ cup vegan parmesan cheese
  • ¼ cup olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, peeled
  • 2 tablespoons water
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper

Instructions

  1. Make the homemade vegan parmesan cheese if you haven't already.
  2. Assemble all the pesto ingredients in a food processor.
  3. Pulse the ingredients for about 30 seconds to combine.
  4. Process on low for 1-2 minutes until smooth, scraping the sides as needed.
  5. Adjust consistency with water if too thick, or add more basil if too thin.
  6. Use the pesto immediately or store it in the fridge for later.
