Basic Vegan Basil Pesto

Ingredients

  • 4 cups fresh loosely packed basil
  • 1 teaspoon black pepper
  • ½ teaspoon salt (optional)
  • ¼ cup extra virgin olive oil
  • 1 lemon juice and zest
  • 3 cloves garlic
  • ½ cup nuts or seeds (i.e., walnuts, pumpkin seeds, almonds, chia seeds, pine nuts, pistachios, or hazelnuts)

Instructions

  1. Place basil in the blender or food processor.
  2. Add black pepper, salt, olive oil, lemon zest and juice, garlic, and nuts or seeds.
  3. Process for about 3 minutes until very smooth and creamy, scraping down the sides as needed.
  4. Transfer to airtight containers and refrigerate or freeze for later use.
