Ingredients

The spread

  • 2 ½ cups finely grated Parmesan cheese
  • scant ¼ cup extra virgin olive oil
  • ¼ cup dry white wine

Optional add-ins

  • to taste chopped dried figs
  • to taste chopped dates
  • to taste chopped chives
  • to taste lemon zest
  • to taste red pepper flakes
  • to taste dried herbs
  • to taste chopped sun-dried tomatoes

Instructions

  1. Combine the grated Parmesan cheese, olive oil, and white wine in a jar or bowl.
  2. Stir gently until the mixture comes together.
  3. Press the cheese down into a flat surface.
  4. Drizzle with a layer of olive oil to help preserve it.
  5. Refrigerate and use within a few weeks.
  6. When ready to serve, scoop out some spread and mix in any optional add-ins.
