Instructions
- Preheat the oven to 400°F and line a baking sheet with aluminum foil.
- Chop the top of the garlic bulb and drizzle 1 teaspoon of oil into it, then wrap it in foil.
- Brush the jalapenos with oil and place them on the baking sheet with the wrapped garlic.
- Roast the garlic and jalapenos for about 30 minutes until the jalapenos are charred and the garlic is soft.
- Peel the skins off the jalapenos, slice them open, and discard the seeds; chop the peppers.
- In a large bowl, shred the Feta cheese with a fork and add the chopped jalapenos, lemon juice, lemon zest, and squeezed garlic.
- Add the remaining olive oil and water, mashing everything together with a fork.
- Adjust the consistency with more water if desired, and season with salt and pepper to taste.
- Serve immediately or store in the fridge for up to a week.
