Feta Spread

Ingredients

  • 1 bulb garlic
  • 3 tablespoons extra virgin olive oil
  • 3 whole jalapeno peppers
  • 2 8 oz bricks of Feta cheese
  • ½ lemon Juice
  • ½ lemon Zest
  • 2 tablespoons water
  • to taste Salt & pepper

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with aluminum foil.
  2. Chop the top of the garlic bulb and drizzle 1 teaspoon of oil into it, then wrap it in foil.
  3. Brush the jalapenos with oil and place them on the baking sheet with the wrapped garlic.
  4. Roast the garlic and jalapenos for about 30 minutes until the jalapenos are charred and the garlic is soft.
  5. Peel the skins off the jalapenos, slice them open, and discard the seeds; chop the peppers.
  6. In a large bowl, shred the Feta cheese with a fork and add the chopped jalapenos, lemon juice, lemon zest, and squeezed garlic.
  7. Add the remaining olive oil and water, mashing everything together with a fork.
  8. Adjust the consistency with more water if desired, and season with salt and pepper to taste.
  9. Serve immediately or store in the fridge for up to a week.
