Ingredients

The base

  • 1-2 tbsp extra-virgin olive oil
  • 1 medium onion, chopped
  • 1 rib celery, sliced
  • ½ red bell pepper chopped
  • to taste salt

The vegetables

  • 2 cups broccoli florets
  • 1 cup sugar snap peas, chopped

The protein and rice

  • 2 cups leftover cooked chicken, diced and/or shredded
  • 1 cup bean sprouts
  • 2 cups leftover cooked long-grain rice

The sauces

  • 3-4 tbsp tamari or coconut aminos
  • 2 tbsp toasted sesame oil
  • 1 tsp fish sauce

The garnish

  • 2 green onions sliced
  • 1 tbsp toasted sesame seeds

Instructions

  1. Heat the oil in a large wok over medium high heat.
  2. Add the onions, celery, and bell peppers with a sprinkle of salt, and sauté until softened.
  3. Add the broccoli florets and sugar snap peas, and sauté for 30 seconds.
  4. Add the cooked chicken, rice, and bean sprouts, followed by the tamari, fish sauce, and sesame oil.
  5. Stir well until the chicken and rice are heated through.
  6. Serve garnished with toasted sesame seeds and sliced green onions.
