Super Quick and Easy Fried Rice
Ingredients
The rice

frozen mixed vegetables (chopped)
The eggs and seasoning

The sauce

soy sauce (reduced sodium organic recommended)

toasted sesame oil
Instructions
- Heat the oil in a large sauté pan or wok over medium-high heat.
- Add the onion and ginger, cooking while stirring for about 1½ to 2 minutes.
- Stir in the garlic and cook for another 30 seconds.
- Add the frozen vegetables directly to the pan and cook while stirring for 3 to 4 minutes.
- Push the veggie mixture to one side of the wok and crack the eggs on the other side, letting them cook for 1 to 2 minutes before mixing everything together.
- Season with salt and pepper to taste.
- Once the eggs are fully cooked, add the soy sauce, sesame oil, and rice to the wok, mixing thoroughly.
- Serve warm and enjoy!
