Super Quick and Easy Fried Rice

Ingredients

The rice

  • 1 cup brown rice (cooked)

The vegetables and aromatics

  • 1 tablespoon olive oil (or coconut oil)
  • ½ cup onion (diced)
  • 1 teaspoon ginger (fresh, minced)
  • 2 cloves garlic (minced)
  • 1 10-oz bag frozen mixed vegetables (chopped)

The eggs and seasoning

  • 2 units eggs
  • to taste salt
  • to taste pepper (red or black)

The sauce

  • ¼ cup soy sauce (reduced sodium organic recommended)
  • ½ teaspoon toasted sesame oil

Instructions

  1. Heat the oil in a large sauté pan or wok over medium-high heat.
  2. Add the onion and ginger, cooking while stirring for about 1½ to 2 minutes.
  3. Stir in the garlic and cook for another 30 seconds.
  4. Add the frozen vegetables directly to the pan and cook while stirring for 3 to 4 minutes.
  5. Push the veggie mixture to one side of the wok and crack the eggs on the other side, letting them cook for 1 to 2 minutes before mixing everything together.
  6. Season with salt and pepper to taste.
  7. Once the eggs are fully cooked, add the soy sauce, sesame oil, and rice to the wok, mixing thoroughly.
  8. Serve warm and enjoy!
