Instructions
- Heat avocado oil in a medium-sized pan or wok over high heat.
- Beat the eggs in a bowl and set aside.
- Once the oil is hot, scramble the eggs in the pan along with the sausage if using.
- Remove the cooked eggs and set them aside on a plate.
- In the same pan, add butter or ghee, then sauté the onion and ginger until the onion is translucent.
- Add the leftover rice, cooked eggs, and green onion to the pan and mix well.
- Stir in the tamari and sesame oil, ensuring everything is well coated.
- Cook for another 3-4 minutes, stirring frequently to prevent the rice from crisping too much.
- Taste and adjust seasoning with more tamari or sesame oil if desired.
- Serve immediately.
