Ingredients

The rice

  • 3 cups Leftover Rice

The cooking fats

  • 1 tablespoon Avocado Oil
  • 1 tablespoon Butter or Ghee

The protein

  • 3 large Eggs
  • 1 stick Sausage/Meat of choice (optional)

The aromatics and flavorings

  • 1 medium Onion, diced
  • 2 tablespoons Ginger, finely grated or chopped
  • ¼ cup Green Onion, chopped
  • 2 tablespoons Tamari or Low-Sodium Soy Sauce
  • 1 tablespoon Toasted Sesame Oil

Instructions

  1. Heat avocado oil in a medium-sized pan or wok over high heat.
  2. Beat the eggs in a bowl and set aside.
  3. Once the oil is hot, scramble the eggs in the pan along with the sausage if using.
  4. Remove the cooked eggs and set them aside on a plate.
  5. In the same pan, add butter or ghee, then sauté the onion and ginger until the onion is translucent.
  6. Add the leftover rice, cooked eggs, and green onion to the pan and mix well.
  7. Stir in the tamari and sesame oil, ensuring everything is well coated.
  8. Cook for another 3-4 minutes, stirring frequently to prevent the rice from crisping too much.
  9. Taste and adjust seasoning with more tamari or sesame oil if desired.
  10. Serve immediately.
