Shogayaki (Japanese Ginger Pork)

Ingredients

Ginger Sauce

  • 1 piece grated ginger (about 5 cm)
  • 1 tbsp mirin
  • 1 tbsp sake
  • 1 tbsp soy sauce
  • ½ tbsp sugar
  • 1 tsp ketchup

Pork

  • 200 g pork loin
  • ½ tbsp ginger juice
  • ½ tbsp sake
  • 1 tbsp katakuriko (potato starch)

Other

  • 1 tbsp vegetable oil
  • 1 tsp sesame oil
  • ½ piece sliced onion
  • 2-3 leaves cabbage (very thinly shredded)

Instructions

  1. Combine all ginger sauce ingredients in a small bowl and stir until sugar dissolves.
  2. Marinate the pork slices in ginger juice and sake for about 10 minutes.
  3. Heat vegetable oil in a skillet over medium-high heat.
  4. Cook the marinated pork slices in a single layer for about one minute on each side until browned.
  5. Remove the pork and cook sliced onion in the same pan.
  6. Add the ginger sauce to the pan and let it thicken.
  7. Return the pork to the pan and coat it with the sauce.
  8. Serve the pork with shredded cabbage.
