Ingredients

Herbed Croutons

  • ¼ cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon salt
  • 1 loaf bread (cut into ½-inch pieces)

Dressing

  • 1 egg egg
  • 3 cloves garlic
  • cup freshly grated Parmesan cheese
  • 2 tablespoons white balsamic vinegar
  • 2 tablespoons red wine vinegar
  • teaspoons Dijon mustard (optional)
  • teaspoons spicy brown mustard (optional)
  • 6 fillets anchovies (drained)
  • ¾ cup olive oil
  • to taste salt and freshly ground black pepper

Salad

  • 2 hearts romaine lettuce (chopped)
  • to taste freshly grated Parmesan cheese (for garnish)

Instructions

  1. Preheat the oven to 450°F and prepare a baking sheet with parchment paper.
  2. In a small bowl, whisk together olive oil, garlic powder, Italian seasoning, and salt.
  3. Toss the bread pieces in a large bowl with the olive oil mixture until well coated.
  4. Spread the croutons on the baking sheet and bake until golden brown, about 10 to 15 minutes, then cool.
  5. In a food processor, blend the egg until frothy, then add garlic, Parmesan cheese, vinegars, mustards, anchovies, salt, and pepper, and pulse until combined.
  6. While blending, slowly drizzle in olive oil to create an emulsion, seasoning to taste.
  7. In a large bowl, combine chopped romaine with Caesar dressing, croutons, and additional Parmesan cheese. Toss to combine and serve.
