Ingredients

The Salad

  • 2 heads romaine lettuce
  • ¼ cup flat leaf parsley
  • cup parmesan cheese

Homemade Croutons

  • 3 cups torn or cubed bread
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • 1 clove garlic

Caesar Salad Dressing

  • 2 cloves garlic
  • ¼ teaspoon salt
  • 6 pieces anchovies
  • 2 egg yolks egg yolks
  • ½ teaspoon lemon zest
  • 3 tablespoons lemon juice
  • 2 teaspoons Dijon mustard
  • ¼ teaspoon Worcestershire sauce
  • ¼ teaspoon black pepper
  • ½ cup mild olive oil

Instructions

  1. Prep the lettuce by washing and drying it thoroughly.
  2. Make croutons by tearing or cutting the bread, tossing it with olive oil, garlic, salt, and pepper, then baking until golden.
  3. Prepare the dressing by smashing garlic and salt together, adding anchovies to form a paste, then whisking in egg yolks, lemon juice, zest, Dijon, Worcestershire, and black pepper.
  4. Slowly drizzle in olive oil while whisking until the dressing is smooth and emulsified.
  5. Assemble the salad by placing chopped romaine in a bowl, adding dressing, grated parmesan, parsley, and croutons, then tossing to combine.
