Ingredients

The Croutons

  • 4 cups cubed crusty bread
  • to taste extra-virgin olive oil
  • to taste sea salt

Caesar Salad Dressing

  • 1 cup mayonnaise
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 1 clove garlic, grated
  • 1 teaspoon Worcestershire sauce
  • a pinch sea salt
  • to taste freshly ground black pepper
  • ½ cup freshly grated Parmesan cheese

The Salad

  • 1 pound romaine lettuce, chopped or torn
  • ½ cup shaved Parmesan cheese
  • to taste freshly ground black pepper

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
  2. Cut the bread into cubes and toss with olive oil and salt, then spread on the baking sheet.
  3. Bake the croutons for 10 to 18 minutes until golden brown and crisp, then set aside to cool.
  4. In a bowl, whisk together the mayonnaise, olive oil, lemon juice, mustard, garlic, Worcestershire sauce, salt, and pepper until smooth.
  5. Stir in the grated Parmesan cheese and adjust the consistency with water if needed.
  6. In a large bowl, combine the romaine lettuce, half the dressing, half the croutons, and half the cheese, tossing to coat.
  7. Add more dressing as desired, then top with the remaining croutons, cheese, and pepper before serving.
