Ingredients

Homemade croutons

  • 2 large slices crusty bread
  • 2 tablespoons extra virgin olive oil
  • ¼ teaspoon fine salt
  • teaspoon garlic powder
  • to taste freshly ground black pepper

Caesar salad dressing

  • ½ cup mayonnaise
  • 1 medium garlic clove, minced
  • 2 teaspoons lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Worcestershire sauce
  • teaspoon fine salt
  • cup finely grated Parmesan cheese
  • 1 tablespoon water
  • to taste freshly ground black pepper

Salad components

  • 2 medium heads romaine lettuce
  • cup finely grated Parmesan

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet with parchment paper.
  2. Cut the bread into ¾-inch cubes and place them on the baking sheet.
  3. Drizzle the bread with olive oil and sprinkle with salt, garlic powder, and pepper, then toss to coat.
  4. Bake the croutons for 10 to 12 minutes, tossing halfway through, until golden brown.
  5. In a bowl, combine mayonnaise, minced garlic, lemon juice, Dijon mustard, Worcestershire sauce, and salt to make the dressing.
  6. Stir in the Parmesan cheese and water, then season with black pepper to taste.
  7. In a large salad bowl, combine the chopped romaine lettuce and croutons, then drizzle with the dressing.
  8. Toss the salad gently to coat the lettuce, then sprinkle with additional Parmesan before serving.
