Caesar Salad

Ingredients

The salad

  • 2 large Romaine hearts
  • 4 cups day old hearty bread, torn into 3/4-inch pieces
  • 2 Tbsp olive oil
  • ¼ cup finely shredded Parmesan

The dressing

  • ¾ cup mayonnaise
  • Tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 4 pieces anchovies packed in oil, drained, minced then mashed
  • 2 cloves garlic, minced
  • to taste salt
  • to taste freshly ground black pepper
  • ¼ cup finely grated Parmesan

Instructions

  1. Preheat the oven to 375°F.
  2. Place bread pieces on a baking sheet and drizzle with olive oil, then toss to coat.
  3. Spread the bread evenly and bake until golden brown and crisp, about 15-20 minutes, tossing halfway through.
  4. In a bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, anchovies, garlic, and ¼ cup Parmesan, seasoning with salt and pepper to taste.
  5. In a large bowl, combine the chopped lettuce with the dressing and toss to coat.
  6. Add croutons and remaining Parmesan, then toss again.
  7. Serve immediately.
