Ingredients

Garlic Croutons

  • 3 cups cubed sourdough bread
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • to taste salt & pepper
  • 2 tablespoons fresh parsley, chopped

Caesar Dressing

  • 1 clove garlic
  • ¼ cup white vinegar
  • ¼ cup olive oil
  • 1 teaspoon Dijon mustard
  • to taste Tabasco
  • juice of ½ lemon
  • 1 tablespoon grated parmesan cheese
  • 1 teaspoon honey
  • ½ tablespoon mayonnaise

Caesar Salad

  • 8 cups chopped romaine lettuce
  • cup shaved parmesan
  • 2 tablespoons grated parmesan

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine cubed sourdough bread, olive oil, and minced garlic, then toss to coat.
  3. Spread the bread cubes in a single layer on a baking sheet and bake for 10 minutes, tossing halfway through.
  4. Remove croutons from the oven and season with salt, pepper, and fresh parsley, then set aside.
  5. In a food processor, blend garlic, white vinegar, mustard, Tabasco, lemon juice, honey, and mayonnaise until garlic is minced.
  6. Add olive oil and grated Parmesan cheese to the mixture and blend until combined, then set aside.
  7. In a large bowl, combine chopped romaine lettuce, shaved parmesan, grated parmesan, and homemade croutons.
  8. Drizzle with dressing or serve on the side.
