Ingredients

Dressing

  • cup mayonnaise
  • tablespoons dijon mustard
  • 3 large garlic cloves
  • 3 tablespoons fresh lemon juice
  • ½ tablespoon white wine vinegar
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 cup olive oil

Salad

  • 1 head romaine lettuce
  • to taste fresh parmesan cheese
  • to taste croutons
  • optional grilled chicken
  • to taste lemon wedges

Instructions

  1. Blend mayonnaise, dijon mustard, garlic, lemon juice, white wine vinegar, salt, and pepper until smooth.
  2. With the blender running on low, slowly add olive oil until fully incorporated.
  3. If the dressing is too thick, add a tablespoon or two of milk.
  4. Store the dressing in the fridge.
  5. To make the salad, toss the dressing with chopped romaine lettuce.
  6. Top with fresh parmesan, croutons, and grilled chicken if desired.
  7. Garnish with lemon wedges.
