Grilled Carrots

Ingredients

The carrots

  • 1 pound medium carrots, sliced in half lengthwise

The seasoning

  • to taste extra-virgin olive oil
  • to taste sea salt
  • to taste freshly ground black pepper

For serving (optional)

  • to taste chimichurri
  • cup cooked farro
  • to taste whipped ricotta
  • to taste toasted pistachios
  • to taste fresh parsley
  • to taste lemon wedges

Instructions

  1. Place the carrots on a plate or baking dish and drizzle with olive oil, salt, and pepper.
  2. Preheat a grill or grill pan over medium-low heat.
  3. Grill the carrots cut side down for 5 to 8 minutes until char marks form.
  4. Flip the carrots and grill for another 3 to 5 minutes until fork-tender and well charred.
  5. Remove from the grill and drizzle with chimichurri, seasoning to taste.
  6. For an optional serving suggestion, spread whipped ricotta on a plate, sprinkle with farro, top with grilled carrots, and drizzle with chimichurri, pistachios, and parsley. Serve with lemon wedges.
