Grilled Carrots

Instructions
- Place the carrots on a plate or baking dish and drizzle with olive oil, salt, and pepper.
- Preheat a grill or grill pan over medium-low heat.
- Grill the carrots cut side down for 5 to 8 minutes until char marks form.
- Flip the carrots and grill for another 3 to 5 minutes until fork-tender and well charred.
- Remove from the grill and drizzle with chimichurri, seasoning to taste.
- For an optional serving suggestion, spread whipped ricotta on a plate, sprinkle with farro, top with grilled carrots, and drizzle with chimichurri, pistachios, and parsley. Serve with lemon wedges.
