Ingredients

The cupcakes

  • ½ cup unsalted butter, softened to room temperature
  • ½ cup packed light or dark brown sugar
  • ¾ cup granulated sugar
  • 3 large eggs, at room temperature
  • cups mashed bananas (about 4 medium or 3 large ripe bananas)
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour (spooned & leveled)
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • 1 teaspoon salt
  • ½ cup buttermilk
  • 1 cup mini or regular semi-sweet chocolate chips

Milk Chocolate Frosting

  • cups confectioners’ sugar
  • ¼ cup unsweetened cocoa powder
  • ½ cup unsalted butter, softened to room temperature
  • 2 tablespoons heavy cream or half-and-half
  • 1 teaspoon pure vanilla extract
  • to taste salt

Peanut Butter Frosting

  • ¾ cup creamy peanut butter
  • ¼ cup unsalted butter, softened to room temperature
  • ¾ cup confectioners’ sugar
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons heavy cream or half-and-half

Instructions

  1. Preheat the oven to 350°F (177°C) and line two muffin pans with cupcake liners.
  2. Cream the butter, brown sugar, and granulated sugar together, then add the eggs one at a time, followed by the mashed bananas and vanilla.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt, then gradually add to the wet ingredients, mixing until combined.
  4. Fold in the buttermilk and chocolate chips, then distribute the batter evenly into the cupcake liners.
  5. Bake for 17-19 minutes until a toothpick comes out clean, then allow to cool completely.
  6. For the chocolate frosting, sift together the confectioners’ sugar and cocoa powder, then beat with butter, heavy cream, and vanilla until creamy.
  7. For the peanut butter frosting, beat together the peanut butter and butter, then mix in the confectioners’ sugar, vanilla, and cream until smooth.
  8. Frost the cooled cupcakes with both frostings, optionally decorating with banana slices or chocolate chips.
