The gravy

  • 5 ounces vegan sausage
  • 2 tablespoons olive oil
  • ¼ cup all-purpose flour
  • 2 cups unsweetened soy milk
  • 1 tablespoon nutritional yeast
  • 1 teaspoon dry thyme
  • 1 teaspoon dry sage
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • to taste freshly ground black pepper

Instructions

  1. Prepare vegan biscuits using your preferred method.
  2. Cook the vegan sausage according to package instructions, then crumble it into bite-sized pieces.
  3. Heat olive oil in a large saucepan over medium-high heat and return the crumbled sausage to the pan.
  4. Sprinkle in the all-purpose flour and sauté until lightly browned, about 1 minute.
  5. Slowly whisk in soy milk, adding ½ cup at a time until all 2 cups are incorporated.
  6. Add nutritional yeast, thyme, sage, garlic powder, salt, and optional cayenne pepper.
  7. Bring the gravy to a simmer, then reduce heat and continue whisking until thickened, about 5-8 minutes.
  8. Serve the warm biscuits sliced in half, drizzled with the gravy.
