Instructions
- Preheat the oven to 425°F.
- Mix soy milk and apple cider vinegar in a small bowl and let it sit for 10 minutes.
- In a large bowl, combine flour, baking powder, and salt.
- Cut the vegan butter into small chunks and mix it into the flour until pea-sized pieces form.
- Stir the vegan buttermilk into the dry mixture until a slightly sticky dough forms.
- Turn the dough onto a floured surface and flatten it to about ½ inch thick, folding it over a few times.
- Cut the dough into 3-inch rounds and place them on a parchment-lined baking sheet.
- Bake for 15-18 minutes until golden brown.
