Ingredients

  2. Mix soy milk and apple cider vinegar in a small bowl and let it sit for 10 minutes.
  3. In a large bowl, combine flour, baking powder, and salt.
  4. Cut the vegan butter into small chunks and mix it into the flour until pea-sized pieces form.
  5. Stir the vegan buttermilk into the dry mixture until a slightly sticky dough forms.
  6. Turn the dough onto a floured surface and flatten it to about ½ inch thick, folding it over a few times.
  7. Cut the dough into 3-inch rounds and place them on a parchment-lined baking sheet.
  8. Bake for 15-18 minutes until golden brown.
