Ingredients

The biscuits

  • 1 batch Best Damn Vegan Biscuits

The mushroom gravy

  • 2 Tbsp vegan butter or olive oil
  • 2 cloves garlic (minced)
  • ¼ cup diced white or yellow onion
  • 1 cup thinly sliced mushrooms (crimini or white button)
  • 2 Tbsp finely chopped walnuts (optional)
  • 1 pinch salt
  • 1 pinch pepper
  • ½ tsp fresh sage or thyme (optional, chopped)
  • Tbsp all-purpose flour
  • ½ cup vegetable broth
  • ¾ – 1 cup unsweetened plain almond milk

Instructions

  1. Preheat the oven to 450°F (232°C) and prepare the biscuits.
  2. Add vegan butter or olive oil to a skillet over medium heat.
  3. Sauté garlic, onion, mushrooms, and walnuts, seasoning with salt and pepper until onions are translucent.
  4. Reduce heat and add flour, whisking to coat and cooking for 1 minute.
  5. Slowly whisk in vegetable broth and almond milk, adjusting thickness as needed.
  6. Cook until thickened, stirring frequently, and adjust seasonings to taste.
  7. Serve by splitting biscuits and topping with gravy.
