Ingredients

The boil

  • 2 cups Water
  • 1 ½ Tbsp Old Bay Seasoning
  • 1 tsp Coarse Salt
  • 1 lb New Potatoes
  • 1 Onion cut in thick slices
  • 6 cloves Garlic
  • 2 Bay Leaves
  • 1 Lemon quartered
  • 2 tsp Cajun Seasoning
  • 2 ears Corn on the Cob
  • 1 lb Smoked Sausage
  • 2 lbs Shrimp

For serving

  • Butter
  • Crusty Bread

Instructions

  1. Prepare all ingredients by chopping or cutting before starting.
  2. Add water to the Instant Pot and turn on the Sauté setting.
  3. Mix in the Old Bay seasoning and salt.
  4. Add potatoes, onion, garlic, bay leaves, and lemon, then sprinkle with some Cajun seasoning.
  5. Add corn and sprinkle with more Cajun seasoning.
  6. Add the sausage pieces.
  7. Add shrimp and sprinkle with remaining Cajun and Old Bay seasoning.
  8. Close the lid and set the steam release knob to Sealing, then cancel the Sauté setting.
  9. Select Pressure Cook/Manual and set for 2 minutes for frozen shrimp (1 minute for fresh).
  10. After cooking, perform a Quick Release of the steam.
  11. Open the lid once the pin drops, and turn off the pot.
  12. Use a slotted spoon to transfer the contents to a serving bowl.
  13. Serve on a table lined with paper, with melted butter and crusty bread.
