Instructions
- Prepare all ingredients by chopping or cutting before starting.
- Add water to the Instant Pot and turn on the Sauté setting.
- Mix in the Old Bay seasoning and salt.
- Add potatoes, onion, garlic, bay leaves, and lemon, then sprinkle with some Cajun seasoning.
- Add corn and sprinkle with more Cajun seasoning.
- Add the sausage pieces.
- Add shrimp and sprinkle with remaining Cajun and Old Bay seasoning.
- Close the lid and set the steam release knob to Sealing, then cancel the Sauté setting.
- Select Pressure Cook/Manual and set for 2 minutes for frozen shrimp (1 minute for fresh).
- After cooking, perform a Quick Release of the steam.
- Open the lid once the pin drops, and turn off the pot.
- Use a slotted spoon to transfer the contents to a serving bowl.
- Serve on a table lined with paper, with melted butter and crusty bread.
