Ingredients

The broth

  • 4 quarts hot water
  • 1 large red onion or yellow onion, sliced into wedges
  • 1 whole head garlic, halved horizontally
  • ½ cup Old Bay seasoning
  • Tbsp fresh thyme leaves (or 1½ tsp dried)
  • lbs medium red potatoes, cut into fourths
  • Salt and pepper to taste

The main ingredients

  • 4 ears corn, husked and cut into fourths or halved
  • 14 oz. andouille sausage, sliced into 1-inch thick pieces
  • lbs shrimp, deveined and peeled if preferred

The finishing touches

  • 6 Tbsp unsalted butter, melted
  • 2 Tbsp fresh lemon juice, or more to taste
  • 2 Tbsp minced fresh parsley

Instructions

  1. Fill a large pot with 4 quarts of water and stir in onion, garlic, Old Bay seasoning, and thyme. Bring to a boil over medium-high heat.
  2. Add potatoes and season with salt. Cook until the potatoes are nearly tender, about 10 to 15 minutes.
  3. Add corn and continue cooking for 3 minutes. Then add sausage and cook for 4 minutes longer.
  4. Gently stir in shrimp and cook until just opaque and pink, about 1 to 2 minutes.
  5. Drain the mixture and spread it over a large serving platter or baking sheet.
  6. Drizzle with melted butter and lemon juice. Sprinkle with parsley, Old Bay seasoning, and pepper to taste, then serve warm.
