Shrimp Boil Skillet

Instructions
- Microwave the potatoes for about 4 minutes until tender, then cut them in half.
- Heat olive oil in a large skillet over medium heat and sauté the onions for 4 minutes.
- Add the potatoes to the skillet and cook for an additional 3 minutes until lightly golden.
- Add the sausage to the skillet and cook for about 3 minutes until slightly browned, then add the garlic and sauté for 1 minute.
- Add butter, shrimp, and corn to the skillet, then sprinkle in the seafood seasoning and thyme, and season with salt and pepper.
- Cook for 2 minutes, then add spinach and cook until wilted and shrimp is cooked through.
- Finish with lemon juice and toss before serving, garnished with parsley if desired.
