Shrimp Boil Skillet

Ingredients

  • 1 lb baby yellow potatoes
  • 2 Tbsp olive oil
  • ½ large yellow onion, chopped
  • 6 oz turkey or chicken smoked sausage, sliced
  • 2 cloves garlic, minced
  • 2 Tbsp butter, diced into small cubes
  • ¾ lb large peeled and deveined shrimp
  • cups fresh corn or frozen, thawed corn
  • 2 tsp Old Bay seafood seasoning
  • ½ tsp dried thyme
  • 4 oz baby spinach (optional)
  • 1 Tbsp fresh lemon juice
  • 1 Tbsp minced fresh parsley (optional)

Instructions

  1. Microwave the potatoes for about 4 minutes until tender, then cut them in half.
  2. Heat olive oil in a large skillet over medium heat and sauté the onions for 4 minutes.
  3. Add the potatoes to the skillet and cook for an additional 3 minutes until lightly golden.
  4. Add the sausage to the skillet and cook for about 3 minutes until slightly browned, then add the garlic and sauté for 1 minute.
  5. Add butter, shrimp, and corn to the skillet, then sprinkle in the seafood seasoning and thyme, and season with salt and pepper.
  6. Cook for 2 minutes, then add spinach and cook until wilted and shrimp is cooked through.
  7. Finish with lemon juice and toss before serving, garnished with parsley if desired.
