Instructions
- Preheat the oven to 400°F and prepare a baking sheet.
- Boil the potatoes in salted water with thyme for 8-10 minutes until tender.
- Add the corn and cook for an additional 3-5 minutes, then drain the water.
- In a small pan, combine butter, Creole seasoning, garlic, and thyme, and sauté for 30-60 seconds.
- Coat the shrimp, potatoes, and corn with the Creole butter sauce.
- Arrange everything on a baking sheet, add the Andouille sausage, and season with salt, pepper, and Creole seasoning.
- Bake for 12-15 minutes until the shrimp is pink and cooked through.
- Garnish with sliced lemon and chopped cilantro before serving.
