Ingredients

The main ingredients

  • 1 pound baby red potatoes, cut into large chunks
  • 4 ears corn, cut into chunks
  • 1/3 cup butter
  • 1 tablespoon Creole Seasoning
  • 2 teaspoons minced garlic
  • 1 teaspoon thyme
  • ½ onion sliced (optional)
  • 1 pound shrimp, peeled and deveined
  • 12 ounces Andouille Sausage
  • 2 lemons halved, plus wedges for serving
  • cilantro chopped, for garnishing

Seasoning

  • to taste salt
  • to taste pepper
  • 2 small sprigs thyme

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet.
  2. Boil the potatoes in salted water with thyme for 8-10 minutes until tender.
  3. Add the corn and cook for an additional 3-5 minutes, then drain the water.
  4. In a small pan, combine butter, Creole seasoning, garlic, and thyme, and sauté for 30-60 seconds.
  5. Coat the shrimp, potatoes, and corn with the Creole butter sauce.
  6. Arrange everything on a baking sheet, add the Andouille sausage, and season with salt, pepper, and Creole seasoning.
  7. Bake for 12-15 minutes until the shrimp is pink and cooked through.
  8. Garnish with sliced lemon and chopped cilantro before serving.
