Ingredients

The main ingredients

  • ¼ onion onion, cut into rings
  • 8 oz chicken thigh or leg, fat trimmed and cut into bite-sized pieces
  • 3 large eggs, lightly beaten
  • ¾ cup water
  • 1 stalk scallion, cut diagonally

The sauce

  • 2 tablespoons Mizkan bonito flavored soup base or soy sauce
  • tablespoons mirin
  • 1 teaspoon sugar

Instructions

  1. Combine all the sauce ingredients in a small bowl and stir well.
  2. Heat a small saucepan over high heat and bring the water to a boil.
  3. Add the sliced onion, chicken, and sauce, and cook for 2 minutes until the chicken is cooked through.
  4. Skim off any scum that forms.
  5. Pour the eggs slowly in a circular motion over the chicken.
  6. Reduce the heat to a simmer and cover the saucepan with its lid.
  7. Cook for 2 minutes until the eggs are set.
  8. Add the scallions.
  9. Serve over steamed rice in bowls.
