Ingredients

The rice

  • 3 cups cooked rice

The main ingredients

  • 250 g chicken thigh fillets
  • ½ unit onion
  • 3 large eggs

The seasonings

  • ¾ cup dashi stock soup
  • 2 tbsp mirin
  • 1 tbsp sugar
  • 1 tbsp usukuchi soy sauce

The garnishes

  • to taste unit chopped green onions

Instructions

  1. Combine all seasonings and set aside.
  2. Cut the onion into wedges.
  3. Cut the chicken into small pieces.
  4. In a pan, bring the seasoning to a simmer.
  5. Add the onion and chicken to the pan and cook until the chicken is done.
  6. Beat the eggs in a bowl.
  7. Pour half of the egg mixture over the chicken and onions.
  8. Cover and let the residual heat cook the eggs.
  9. Serve over bowls of rice and garnish with green onions.
