Instructions
- Thinly slice the onion and cut the Tonkatsu into slices.
- Lightly beat the egg in a bowl and set aside.
- Pour the Dashi stock into a shallow frying pan and bring it to a boil over medium heat.
- Add the sliced onion and cook until softened.
- Stir in the Mirin, Sugar, and Soy sauce, and cook for a few more minutes.
- Place the sliced Tonkatsu in the pan and pour the beaten egg over it.
- Cook until the egg is half cooked and slightly runny.
- Serve the rice in a large bowl and slide the Tonkatsu and egg mixture on top.
- Garnish with chopped green shallots or Mitsuba.
